Oriental Coleslaw (it’s amazing!)

This is one of the best coleslaws you will ever have. It’s sweet and crunchy and satisfying (Wait . . . isn’t that a movie quote?). I fell in love at the first bite, and couldn’t help but go for seconds.

My first bite of this delish salad was while I was at an awesome family’s house, the Klimeks. I took that bite and fell into a world of my own. Gemma, my friend, had to shake me to wake me up. It was rather embarrassing. Fortunately, Gemma never really had to do that and I hope she never will, for her sake.

Our family makes this recipe often, thanks to Mrs. Klimek who is such a great cook. We never will forget her generosity by giving us this recipe. We will always be in her debt. 😉

Tweaked From the Original: The Klimek Family
For the Salad:
2 bags coleslaw
2 apples, cored and diced
2 pkgs oriental Ramen noodles
1 pkg of the seasoning from the noodles
4 Tbs. butter
1/2 – 1 c. slivered almonds
Sesame seeds (if desired)
For the Dressing:
1/2 C oil
1/2 C sugar
1/4 C red wine vinegar
1-2 T soy (optional)
How To Consume Properly
1. Mix the coleslaw and apples together. Set aside.
2. In a saucepan over medium heat, mix the crushed Ramen noodles, seasoning, butter, almonds, and seseme seeds (if using) together. Continue to saute until the butter is melted and the mixture is beginning to lightly brown. Set aside.
3. In a medium sized bowl, beat the oil, sugar, and red wine vinegar until the sugar is completely dissolved. Add the soy one tablespoon at a time and taste. Keep repeating until you’ve reached the desired amount of soy flavoring. I prefer a lot of soy so I add the two tablespoons, if not more.
4. Immediately toss the noodles, coleslaw, and dressing together until completely mixed. Serve immediately so that the apples don’t brown and the noodles don’t soften.
Yum, yum, yummy. Yummier. Yummiest. Every bite gets better and better.
