Our family is a big fan of drop cookies. They’re the perfect combo: peanut butter, chocolate, and oats. It doesn’t get much better than that. If you ask any of us kids what kind of cookie they want, it’s an immediate answer of “drop cookies.” It’s crazy, but true.
I love them becuase they’re easy to make. You boil ’em, mix ’em, and then drop ’em. And then you watch ’em get eaten, smeared across a baby’s face, or “dropped” to the floor because an unpatient ten-year-old tried to eat a non-set cookie. Whether you eat them set, or still soup, these cookies are one of the best.
The original is always delish, but a tweaked version sometimes is better. This tweaked version is best. Ever hear of Coca-Cola cake? Well, this is the cookie version of it. This drop cookie omits the peanut butter and replaces it with Coke, cinnamon, and white chocolate.
Try them for yourself; you won’t be disappointed!
CHOCOLATE WHITE CHOCOLATE CINNAMON COCA-COLA DROP COOKIES
2 c. white sugar
1/4 c. cocoa powder
1/2 c. Coca-Cola
1/2 c. butter
1 tsp. vanilla
1/4 – 1/2 tsp. cinnamon (optional)
1 pinch salt
1 bag white chocolate chips, divided
3 c. oats
How To Consume Properly
1. In a large pot on medium heat, add the sugar, cocoa, Coke, and butter. Mix together until melted and boiling. Remove from heat and add the vanilla, salt, cinnamon (if desired), and half the bag of white chocolate chips. Add the oats.
2. Drop tablespoon-fuls onto wax paper and let set for a few hours . . . if you can wait that long!
NOTE: The cinnamon adds a “different” flavor to the cookie – a good different flavor. In Coca-Cola cake, cinnamon is also added to give the cake that distinct flavor, which is the same reason why I add it to the cookie. If you aren’t as big of a fan of cinnamon as I am, you can omit it or put less in and taste.
