Omelets are one of the funnest breakfast thrills on the planet. You can totally change up the fillings to suit your mood whether that be sweet or savory, veggie or fatty, yummy or disgusting . . . umm, no.

This omelet, a pizza omelet, is one of the most versatile omelets ever. All you need is a little pizza sauce, Italian seasoning, and some mozzerella cheese to complete the pizza flavor. And then the toppings! Pepperoni, olives, veggies, etc. Have fun with it! That’s what’s so much fun about a pizza . . . I mean, omelet. Right.

Pizza omelets aren’t just for breakfast, once you add the meat this can become a full meal. It’s easy enough to whip up for a fast lunch or a rushed dinner. It can be made fast enough so that it’s a gourmet meal for one.

Why You Go “Mmm . . . ”

For the omelet:

3 eggs

3 Tbsp. milk

2 tsp. Italian seasoning

Salt and pepper, to taste

For the filling:

1/4 c. onion, diced

1/4 c. zucchini, diced

1/4 c. diced mushrooms

1 tsp. minced garlic

2 tsp. Italian seasoning

Salt and pepper, to taste

1 Tbsp. butter (or any other oil)

1/4 c. mozzerella cheese

1 Tbsp. parmesan cheese

1/2 c. pizza sauce

How To Consume Properly:

1. Beat the omelet ingredients together and set aside.

2. In a skillet over medium heat, sautee the onion, zucchini, mushrooms, and seasonings in the butter until the vegetables are soft. Transfer to a plate and set aside.

3. In the same skillet over medium heat, add the omelet mixture and flip when the first side is set. On half of the omelet, lay down the mozzerella cheese and the filling mixture. Fold over and transfer to a plate.

4. Garnish the omelet with the pizza sauce and parmesan cheese.

5. Serve loving eggs and pizza combos all of the way.
