Egg Salad Perfected

Lent is hard, but is a great time for penance and growing in holiness. Eating meatless is especially hard, but is great for growing in temperance. One of our favorite meatless foods that are GREAT for Fridays are egg sandwhiches. They’re easy to whip up and yummy to munch down. And, as a bonus, eggs are healthy! Gotta love healthy.

Egg salad can be very boring: eggs + mayo. I like to spice it up and add a dash of that and a handful of this. It makes egg salad so much more exciting . . . if egg salad can be considered “exciting.” But, that’s alright ’cause it’s lent.

This egg salad is my favorite version of egg salad. It’s tangy, sweet, and has a kick of spice. You’ll love it, too, and I bet you won’t be able to have just one sandwich.

EGG SALAD PERFECTED

Why You Go “Mmm . . . ”

12 hard boiled eggs, peeled and roughly chopped

1 stalk of celery, thinly diced

1 Tbsp. finely diced onion

1 tsp. worcestshire sauce {Mom, how do you spell it?}

1/4 c. dijon mustard

1 Tbsp. apple cider vinegar

1/2 c. mayo, give or take a few tablespoons depending on your preference

Dash of paprika {optional . . . or you could add more!}

Salt and pepper, to taste

How To Consume Properly:

1. Mix all of the ingredients together until thoroughly combined. Taste and adjust the seasonings according to your preference.

2. Top the salad onto bread or some leafy greens. Just make sure to lick the bowl when you’re done, like you needed me to tell you that.
