Salsa Re-Done (aka: Texas Caviar)

I love salsa, don’t get me wrong. But when someone comes and gives salsa an entirely different twist, you just gotta love it! This salsa, Texas Caviar, is amazingly good. It’s amazingly good and doesn’t taste like salsa. It’s a twisted salsa because you eat it with chips. I eat it with a spoon, at times. It’s just too hard to resist.

The Italian dressing gives this baby a different yummy taste. The hominy, I think, does the same. The beans balance it all out for the perfect Texas Caviar. I love perfection, especially when it comes to this stuff.

1 can black beans, rinsed and drained

1 can hominy, drained

1 can black eye peas, rinsed and drained

1 can corn, drained

1 (14.5 oz.) can diced tomatoes, drained

1 (4 0z.) can jalapenos

1 large green pepper, diced

1 bunch green onions, chopped

1 small onion (red or yellow), chopped

1 bottle Italian dressing

1/2 tsp. garlic salt

How To Consume Properly:

1. Mix all of the salsa ingredients together in a large bowl.

2. Squirt the bottle of Italian dressing in a little at a time until you’ve reached the desired liquid ratio.

3. Add the garlic salt and taste to see if there needs to be any seasoning adjustments. Add more onion or salt, if needed.

4. Serve by the heapful and a pile of chips. Love it all the way.
