I love salad. It”s fresh and crisp and yummy. Not all salad is as good as others. Some are way to creamy. Others are way to cheesy. And some are just gross! My salads must have the perfect balance of sweetness and tang, when I’m feeling sugary. This poppy seed salad hits that very spot. It hits that “bull’s eye”.
This salad has a sweet, yet tangy, dressing that is balanced by the sweet cranberries and the tart Swiss cheese. It’s pure glory.
POPPY SEED SALAD
For the Salad:
1 (large) romaine
4 0z. swiss cheese, cubed
1 c. cashews or almonds (or any other kind of but you perefer)
1/4 sweetened, dried cranberries
1 apple, cubed
1 pear, cubed
For the Dressing:
1/2 c. sugar
1/3 c. lemon juice
2 Tbs. finely chopped green onions
1 tsp. dijon mustard
1/2 tsp. salt
2/3 c. olive oil
1 Tbs. poppy seeds
How To Consume Properly
1. Mix the salad ingredient together until well combined.
2. Beat the dressing ingredients together until well combined.
3. Toss the salad and dressing together until the salad is completely coated with the dressing.
4. Serve and enjoy the scrumptiousness. Scrumptiousnessness. Scrumptiousnessnesssnesss. Never mind.
